It is a small counter in Hoquiam doing the unglamorous version of this properly — beef ground fresh, sauces made from scratch, and nothing sitting under a lamp waiting for you.

It starts as a loose ball of fresh-ground beef dropped on a hot flat-top. Loose is the whole point — packed meat turns into a hockey puck, and you can taste the difference from the first bite.
Hard, once, with a heavy press, and never again after that. Every second it spends spread thin against the steel is a second it is building crust.
Deep brown, lacy at the edges, crisp where the beef met the steel. That edge is the part people mean when they say a burger tastes like a burger.
